A Planner's Checklist for Corporate Dessert Catering

Corporate dessert service has a different failure mode than a wedding. Nobody remembers a good one, and everybody remembers the one where forty people couldn't eat anything. The checklist below is oriented around not being that event.

Settle dietary coverage first

In a mixed corporate room you're serving halal, vegetarian, nut-allergic, and gluten-sensitive guests simultaneously, and none of them should have to interrogate a server. The cleanest solution is a menu that's halal by default, with clearly labeled nut-free and gluten-free options rather than a separate hidden tray.

Time it against the program, not the clock

Dessert placed during a keynote gets ignored. Dessert placed at the transition into networking gets consumed and does actual work — it gives people a reason to stand up and move toward each other. Ask for the run-of-show before you set a service time.

  • Confirm the loading dock, elevator access, and whether a certificate of insurance is required.
  • Ask who owns the power circuits, and whether AV has already claimed them.
  • Get the final headcount deadline in writing, along with the overage policy.
  • Confirm whether the venue requires its own staff to serve, which changes the quote.
  • Establish where breakdown waste goes — some buildings do not allow it in house bins.

Budget for the room, not the plate

A live station costs more per guest than a platter and buys something a platter cannot: movement, conversation, and a focal point in a room of people who mostly don't know each other. If the goal of the event is networking, that's not decoration — that's the mechanism.

A station gives strangers something to stand next to. That's the entire value.
